Blueberry Lemon Cupcakes

Yes it’s summer, and yes everyone is doing that “I can’t eat that because of my beach bod”, “But what about my bathing suit” thing. Like I get it, kind of. I get that you need to deprive yourself from all the flavorful food that comes out in the summer, just in case you have your Bay Watch moment running up the beach. So, for those of you who like me, who will be not only enjoying the sun but will not be caught dead showing off my beach bod, I give you Blueberry Lemon Cupcakes. A great addition to any summer gathering!

Blueberry Cupcakes:

2 ½ c flour

2 ½ tsp baking powder

¼ tsp salt

8 tbs unsalted butter (room temp)

1 1/3 c sugar

2 large eggs (room temp)

2 ¼ tsp vanilla

1 ¼ c whole milk

1 cup fresh blueberries (I cut a few in half)

2 sticks of unsalted butter (room temp)

4 c confectioner’s sugar

1 tsp milk

1 tsp vanilla

¼ salt

Lemon zest

½ c blueberries, and some for a garnish
