With summer coming to an end, I thought I would take one of my favorite recipes from this summer and add a twist to it. Every summer I make Caprese Salad. It’s perfect for any party, or just sitting watching the most recent episode of the Kardashians (Kim’s wedding makes me cry every time). Its refreshing, low cal and super easy. With summer ending, I know my Caprese obsession will not so here’s how I switched it up!
By adding chicken, it’s the perfect meal that can be served all year round. Even though the Farmer’s Markets will be closed, you can still find some great local produce at your local grocery store.
Drizzle some olive oil in a pan, and place the chicken strips. I then spread some salt& pepper. From here I began to add the layers of tomato, basil, and mozzarella. On top just a little more live oil and then some crushed red pepper, it gives it a little kick.
