The New Birthday Cake…Maybe

If you know me, you shouldn’t be surprised that I am still celebrating the Rookie Party birthday. How am I supposed to just say goodbye to the one year blog-versary?! I can’t, that’s how and I will keep celebrating because it’s my blog birthday and I can keep talking about it if I want to…I’ll stop soon.

In the spirit of all things birthdays, I found this great easy recipe on A Beautiful Mess. Its birthday cake popcorn! Not only can I eat this while celebrating, but it also makes the perfect Bachelor Night snack.

Melt 1 ½ cups of white chocolate in the microwave, 30 seconds and then stir. Repeat until all the chocolate is melted. Next you want to put ¼ cup of vegetable shortening in with the white chocolate.

Then mix the 1 ½ cup of the cake batter mix in with the chocolate and shortening. Then take the mixture and combine with popcorn (don’t worry, some will break…a lot will break). I then put on a bake sheet, threw some sprinkles on them and threw them in the fridge for a couple hours to make sure that the chocolate hardened.

Easy as pie!

#rookietip: try sprinkling a little sea salt over the finished popcorn to add a little more flavor
